First folder is a brief introduction to collection by Randall Tarpey-Schwed. The twelve individual recipe folders cover California culinary history from 1880-1980. The recipes, gathered from hundreds of cookbooks by the editor, start with the Gold Rush (Hangtown Fry) and extend through the creation of California Cuisine (Joyce Goldstein's Squab with Basil Butter). Each folder is illustrated on front, with title in red; recipe inside is on recto with brief history of the recipe on verso by various food writers or chefs.
