An employee manual for the soda fountains popular at Walgreen's drug stores (now Walgreens, sans apostrophe to aid silly Americans). The manual covers "Sandwiches, Beverages and Fountain Specialties that are always of the highest quality carefully prepared and attractively served" (the preface). Also included are directions for the uniform and comportment for "soda men" and "girls" ("bright polish on nails prohibited"). Sections included: Ades, Fruit Freezes, Cooked Fruit, Eggs, Hot Dishes (including Hot Tomato Juice, Chili Con Carne, and Chop Suey), Milk Drinks (including Hot Chocolate, Cold & Hot Chemm (?), Frappes, Malted Milk, Milk Shakes, and Egg Chocolate (not an egg cream). Salads, including the Banana Nut Salad and Pineapple, Cheese, and Nut Salad are given equal space, while Sandwiches are quite basic. Sodas, such as the Doubl' Dip Soda, the Black Cow, and the Lucky Mondae, lead into Sundaes: Hot Fudge, Banana Royal, and Brick Ice Cream. Instructions are fairly explicit, and illustrations serve to demonstrate proper process or plating. Some light soiling to the interior.
