One Hundred Mushroom Receipts

  • Cleveland: Charles Orr, 1899
By Sargeant, Kate; Knox, Wm. (introduction)
Cleveland: Charles Orr, 1899. Small octavo (18 x 14 cm.), 52, [4] pages. Index. FIRST EDITION. The first cookbook dedicated to mushroom recipes published in the U.S., published at the height of the debate about mushrooms in culinary applications. The recipes, in narrative form, often contain the name of the specific mushroom used, e.g. Boletus Soup, Agaricus Campester Stew, Cantharellus Cibarius Stew, Lycoperdon Giganteum with Tomatoes, etc. The introduction is supplied by William Knox, President of the Mycological Club of Cleveland. A bit of age-toning, otherwise internally clean and sound. In publisher's illustrated pink wrappers, titled and decorated in light and dark brown. Some light edgewear and a small stain to the bottom edge, otherwise very good. With the rubber stamp of the "Table Talk Publishing Company", the Philadelphia-based culinary periodical. Very scarce in the marketplace. [OCLC locates eleven copies; not in Volbracht].
