The author explains Chinese ingredients and techniques helping to bridge the gap between Chinese culinary practice and Western kitchens. Recipes for soups, vegetables, soups, rice and noodle dishes, meats, eggs, fish, tea, with an appendix and suggested menus. Some hybrid "Chinese- American" recipes include a couple of variations on chop suey and chow mein recipes along with "Rice au Gratin" and "Choi Shang Choi" (a fruit/mayonnaise salad incorporating some Chinese ingredients). Illustrated throughout with black and white photos. Interior clean and crisp, boards lightly toned.
