Pre-printed "auto-signed" by both author and artist. A wonderful combination of Louisinana-themed art and genuine Cajun/Creole food makes this cookbook a treasure. Classic dishes such as gumbos, crawfish preparations, beignets, gingerbreads, oysters and artichoke soups, and various game and seafood recipes of Cajun and Creole restaurant cooking in the early 1980s.
John D. Folse (b. 1946) is a Cajun from St. James Parish - an area of South Louisiana called the River Road, on the east bank of the Mississippi River between New Orleans and Baton Rouge. Folse was the founder and chef-owner of Lafitte's Landing Restaurant, which opened in 1978 in the historic Viala Plantation House near Donaldsonville, Louisiana.
George Rodrigue (1944-2013) was a Louisiana-born American artist best known first for his Cajun-themed paintings and later for the globally recognized "Blue Dog" series. Born in New Iberia in the heart of Cajun (Acadiana) country, he described his early work as a mission to "graphically interpret" a heritage he felt was disappearing.
